Just like in the past 15+ years at the end of the “second wave” of coffee, way back before Mostra. As a result, heirloom varieties, particularly Typica, are still prevalent in many old farms. The coffee trees are 30-40 years old, older than the farmers! We aim to show the farmers that there are people who appreciate and are willing to pay more for the heirloom cultivar to compensate for its lower yield. Typica has become rare as farmers have switched to higher-yield, more rust-resistant strains.\u003c\/p\u003e\n\u003cp\u003eThis experimental lot from Doi Saket in Chiang Mai was developed by Beanspire in collaboration with Nui and Aoy, a young couple who left their white-collar jobs in the city to return to their parents' coffee farm five years ago. Nui, 34, is an engineer by training, while Aoy, 32, is an accountant by training. In this lot, we explore the possibility of creating cleaner, more complex coffee.\u003c\/p\u003e\n\u003cp\u003eWhen cherries arrived at the mill at night, we pulped the coffee immediately and fermented the wet parchment in a closed anaerobic tank without water for three days. We then added water to the tank and continued fermenting the coffee underwater for three more days before washing, soaking, cleaning, and drying it on raised beds. This double-stage fermentation process, commonly carried out in Kenya, produces exceptional coffee. Once dried to the right moisture content, the coffee is delivered to the dry mill for hulling and sorting. We put a bow on 2021 with some Philippine \"nano-lots\" that Ryan (Mostra Director of Coffee and Many Things) worked on with our friends at Kalsada in this vein, examples being the Sitio Belis Extended Anaerobic and Pigtauranan Anaerobic Natural.\u003c\/p\u003e\n\u003cp\u003eSumatran coffees have historically been divisive, and a major factor in that is the \"wet hulled\" processing method. Called \"Giling Basah\" in the native Bahasa language of Indonesia, the steps involved typically result in thick-bodied coffees with blunted acidity and some rustic notes that wouldn't be sought-after in any other origin but are expected and sometimes treasured in a Sumatra. The long and short (editor's note: roaster Nick can definitely go long on this...) is that in removing the coffee bean (seed) from the cherry, between the most common method (washed\/wet) and the \"ancient\" method (natural\/dry) there are innumerable variations. In most cases, once the mucilage (think \"meat\" of the cherry) is fully removed, the coffee is rested in it's parchment casing until it is in the lot-to-mid teens regarding moisture percentage.\u003c\/p\u003e\n\u003cp\u003eGiling Basah is resultant of how the marketplace culturally differs in Indonesia. Instead of farmers selling cherries to a co-op, for example, the coffee is milled down to parchment quickly by the farmer and sold after only a few hours of sun-drying, typically 50% moisture. The mills use specialized machines to remove the parchment from coffee when its 20-30% and then dried completely bare, accelerating the timeline. Why? Climate is your main reason, with mostly partial sunlight, super-high humidity, and the rainy season makes drying the coffee for export a huge pain.\u003c\/p\u003e\n\u003cp\u003eThe finished product using newer processing methods can still result in typical Sumatran notes (jungle floor, tobacco, mulchy, sweet basil, to name a few) but as with most other origins it is becoming increasingly common to find a coffee sharply straying from what once typified it's region. Yeast and bacteria contribute to the ferment of cherry sugars and holding a higher thermal temperature maintains this slow ferment for about 60 hours. Our tanks are properly vented to release CO2 and which helps retain great acidity in each profile. The cherries are brought to traditional Ethiopian drying beds, one layer thick, and hand stirred every few hours during sun exposure for the first 5 days. This creates even drying for consistency. In 2022, we faced the challenge of low harvest yields by the farmers we have traditionally worked with so we sought other mediums and new producers to help us on our mission. Having previously cupped coffee from the Philippine Coffee Quality Competition (PCQC) at the Coffee Expo in April of 2022, while simultaneously winning the US Roaster Championship, we tasted some fantastic lots of coffee. We worked with Kalsada to come up with a plan to buy the coffee from the PCQC. In fact, we originally went into the auction with the goal of buying ALL the coffee, and setting record prices for farmers in the process. During the bidding, we went back and forth over the 12 lots and came across 2 stiff competitors who did not want to back down. We continued to bid and drive the price up on all auction lots but eventually refocused our efforts on these 9 lots. Collectively, we drove the #1 lot up to a stunning $75\/kg, at which point we yielded to our friends at Teofilo after blowing out the previous auction record price.\u003c\/p\u003e\n\u003cp\u003eThese 9 lots come from various farmers in Bukidnon and Davao del sur and serve as an excellent reminder that great coffee is being grown all over the Philippines. During her stay there, unfortunate events (such as political unrest and landslides) occurred. She had also heard that the market price for coffee beans in Balutakay was slowly increasing. Sumatran coffees have historically been divisive, and a major factor in that is the \"wet-hulled\" processing method. Called \"Giling Basah\" in the native Bahasa language of Indonesia, the steps involved typically result in thick-bodied coffees with blunted acidity and some rustic notes that wouldn't be sought-after in any other origin but are expected and sometimes treasured in a Sumatra.\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003eGiling Basah is resultant of how the marketplace culturally differs in Indonesia. Instead of farmers selling cherries to a co-op, for example, the coffee is milled down to parchment quickly by the farmer and sold after only a few hours of sun-drying, typically 50% moisture. The mills use specialized machines to remove the parchment from coffee when it's 20-30% and then dried completely bare, accelerating the timeline. Why? The climate is the main reason, with mostly partial sunlight, super-high humidity, and the rainy season makes drying the coffee for export a huge pain. The finished product using newer processing methods can still result in typical Sumatran notes (jungle floor, tobacco, mulchy, sweet basil, to name a few). Still, as with most other origins, it is becoming increasingly common to find a coffee sharply straying from what once typified its region. The area has two rainy seasons: March to May and October to December; with two corresponding harvest seasons: May to June and November to December. Most of their coffees fly under the banner name of Pegasing, where the coffees are farmed and collected into central facilities. Fusing innovations in fermentation and drying with Sumatra's unique varieties, Hendra has made his team of producers and his methods the premier pioneering act in Sumatra specialty coffee processes.\u003c\/p\u003e\n\n\u003cp\u003eThis Kenya Style double washed process is the opposite of the traditional Indonesian processing method of wet-hulling. Cherries are pulped as quickly as possible after being picked, ideally within eight hours. The coffee then sits in a tank before natural fermentation begins. As the coffee ferments, yeast and bacteria eat sugar and convert it to amino acids. After 12-18 hours, the miller will add fresh cold water to the tank, stalling the process. The tank is then drained of water before the process starts again.\u003c\/p\u003e\n\n\u003cp\u003eThis pulse of fermentation extends the time the coffee goes through the process. It can last up to 72 hours. After fermentation, it is manually agitated by allowing the coffee and water to follow narrow channels. Heza pumps water from a nearby natural spring to the very top of the station, and washed processing cascades from there down to the bottom, where cleaned and graded parchment is then tagged and couriered to various plots on the hillside for organized drying.\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003eCherry from Nkonge farmers is floated and hand-sorted for maximum ripeness upon delivery to Heza. Once the cherry is de-pulped the parchment undergoes a double fermentation process, including a 12-hour dry fermentation, followed by a 24-hour wet fermentation, during which the parchment is submerged entirely in spring water. After the set of fermentations is complete the parchment is “footed”, or agitated by dancing barefoot in the parchment to help the decomposed mucilage completely detach. Once the agitation is complete, the parchment is rinsed in fresh water, graded by density, and left to soak another 4-6 hours in a final rinse tank. Post-soak, the parchment is moved to shaded drying beds to allow residual surface water to evaporate, during which it is hand-sorted for any insect damage and visual imperfections. Parchment is then moved again to the larger beds with no shade to dry completely, typically taking 16-20 days.\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003eLMCP is a microlot business. All of their infrastructure, systems, employees, and marketing are designed to support large numbers of unique and fully traceable coffees. Doing so in Burundi is especially difficult because farms produce very little cherry and are scattered across broad landscapes. They are also numerous, requiring the successful coordination of hundreds of farmers and processing staff just to produce a single differentiated lot. Importantly, such an effort requires sustainable prices to support, so the coffee itself needs to be as delicious as possible. Fortunately, LMCP excels at identifying landscapes and communities with potential and investing heavily in farmer livelihood. With this formula, they are easily producing many of the country’s best coffees each year.\u003c\/p\u003e\n\u003cp\u003eLMCP organizes its farmer base by the hills they live on, designating delivery days of the week for each microregion. This is common practice for processors in Burundi, but unlike most, LMCP separates every hill and delivery day until processing is complete and a quality assessment has been made. Nkonge is one of the contributing hills to Heza, and one of the more pastoral, even for this part of Kayanza Province which is already quite remote. Farmers on Nkonge often grow onions, tea, wheat, cabbage, corn, cassava, and peas, all in addition to their coffee. Long Miles themselves manage 2 farms of their own on Nkonge Hill, with a total of 5,334 coffee trees in production. 370 farmers across Nkonge Hill are registered partners with LMCP and receive not only highly competitive prices and post-harvest premiums for their cherry but also farm-level trainings covering canopy and fertilizer development, pruning, harvesting for quality, and integrated pest management. Farmer trainings are all provided by local “Coffee Scouts”, LMCP’s team of community-based trainers who serve as local instructors. The education and high prices combined have helped many of LMCP’s farmers renew their faith in coffee as a long-term livelihood. This is from a specific farm owned by Asor Merlaeku (39), one of the most sophisticated farmers we have encountered. This coffee is an innovation that we just started to explore with Asor. The process is called “Raisin Natural”, meaning that the cherries were left to dry on the trees and harvested only at the end of the season. We say that this is an innovation because normally these dried coffee cherries were left there because farmers did not have the resources to harvest all the ripe cherries in time. It features mango and pink starburst up front with ruby red grapefruit juice. Complemented with some nicely Kenyan tomato compote notes and cooling into a smooth pistachio gelato. \u003cbr\u003e\u003cbr\u003eThis coffee is from the Ichamama Factory, a washing station near Karima Hill in Nyeri. The station was named after the Ichamama river which flows near enough to the station to be the source of water for processing coffee. Ichamama is one of 19 washing stations that make up the Othaya Farmer's Coopertive Society, a coop-run organization, one of the older ones I might add. Othaya started in the mid-1950s, ballooning from 250 original members to 15,000 strong today. Karima is one of the oldest of the group, erected in 1964, and currently with nearly 1,000 farmer members (and is one of the most productive of the 19). The station sits at about 1750 meters above sea level, and coffee is grown in the higher altitude areas surrounding it. Rumukia – or New Rumukia Farmers Cooperative Society – is one of Nyeri’s smaller coop societies, with just under 1200 members and three washing stations, aka factories: Thunguri, Gaikundu, and Kagunyu. Their 2022-2023 harvest intake was reported at 224,300 kg of coffee cherry, roughly 188kg per member.\u003c\/p\u003e\n\u003cp\u003eProcessing here happens in much the same way as it has for decades, with a unique post-processing clean water soak acting as an additional washing step.
