These producers receive technical assistance, free of charge, from agronomists to help improve quality across the entire supply chain. The coffee is picked ripe and pulped and separated in Colombian Penagos machinery, then fermented and washed with careful monitoring for quality. After drying, Lotus Washed is then stored in Da Lat, which has a lower average temperature than Ho Chi Minh, until it is ready for export, at which time it is hulled and sent to Ho Chi Minh for export. The coffee is still comprised of farmers from the same region as the coop coffee of years past (\"Gure Genji\"), and a lot of the same cooperative members are contributing to it as well. We also paid the same exact price for this coffee as we did coffee from the cooperative (coming a little later this year, with \"coop\" in the name), and being from the same region, the cup quality is indistinguishable. This is the second year of export for this particular wet mill. It's a project that's been in the making for several years now by a small exporter we work with in Addis. He got his start in the coffee trade through his father, whose long history working for an early exporter in Addis called Besse afforded him the opportunity to branch off into his own, smaller export business that has slowly grown into what it is today. Their wet mill is in Gera, near Kecho Anderecha. The station was named after the Ichamama river which flows near enough to the station to be the source of water for processing coffee. Ichamama is one of 19 washing stations that make up the Othaya Farmer's Coopertive Society, a coop-run organization, one of the older ones I might add. Othaya started in the mid-1950s, ballooning from 250 original members to 15,000 strong today. Karima is one of the older of the group, erected in 1964, and currently with nearly 1,000 farmer members (and is one of the most productive of the 19). The station sits at about 1750 meters above sea level, and coffee is grown in the higher altitude areas surrounding it. Since then, coffee has been replaced as a primary crop.\u003c\/p\u003e\n\u003cp\u003eIn 2016, we were introduced to a cooperative of coffee farmers in Pigtauranan, most of whom cultivated robusta and only recently started to grow arabica. There was not much interest in arabica then because their primary market was commodity, and specialty was just a buzz word in the Philippines. We knew that coffees from this region had a lot of potential, so we built the Pigtauranan mill in 2020 and began working with smallholder family farmers.\u003c\/p\u003e\n\u003cp\u003eCherries from different areas are brought either by foot, habal-habal (motorcycle taxi), carabao (water buffalo), or horse in areas where transportation is inaccessible. Kenya where the gentle decent is interrupted by a hill the Kikuyu people called Kia-Nyiri, which British colonists shorten to Nyeri by way of naming an outpost that was established on the spot, a natural crossroad for travel and trade in the early days of the 20th century. The commercial cultivation of coffee, new to Kenya, helped grow the outpost into a town. Since 1999, nearby Muwa Estate has been processing its own coffee and that of other smallholders in a factory on the outskirts of Nyeri. Most of the farmers in the region grow SL28, SL34, Ruiru 11 and some Baitan in the red volcanic soil under the shade of macadamia and gravellea trees alongside tea, banana, and corn.\u003c\/p\u003e\n\u003cp\u003eYou may also notice that this coffee is notated as AA instead of PB like most of our recent offerings from Kenya. In the past years, we worked with each house individually on their wet processing and bought their parchment before hulling and grading at our mill. In 2017-2018 season, we invested in a wet mill, operated by a few of our partner producers, all belonging to the five Merlaeku brothers who are of Akha Hilltribe minority, so we had more control of the process since the cherries and we also bought cherries from outside the family as well. In the 2018-2019 season, we improved the mill by adding the roof, buying new pulpers and improving workflows. In the 2019-2020 harvest, we bought an electricity generator, built a cupping lab for the farmers, and laid new concentrate flooring for the mill. The varietals here are a mixture of Catuai, Typica, Chiang Mai \u0026amp; SJ133. SJ133 is genetically identical to Costa Rica 95, while Chiang Mai is a local hybrid that is a cross between SL28 x Caturra x Hibrido de Timor. Indeed, many coops in the West of Ethiopia have struggled to find good buyers who will pay enough for the coffee, to manage their own debts, and from internal struggles and graft. Nano Challa was formed as part of an initiative to aid farmers in a more comprehensive way, starting cooperatives that could be governed by the farmers, rather than selling their coffee to privately run mills, and 'middle men'. The program was administered by a non-government organization that not only coordinates agronomists and managers for each of the coops they work with, but also has a business adviser assigned that helps the cooperative manage their debt, re-invest in quality improvements at the mill, and verifies distribution of income to all members. They've since graduated from this program, and are now part of an independent, local Union called Kata Muduga, who assist the cooperatives with functions like marketing, exporting, and general representation on an international scale. Nano Challa is a smaller cooperative coffee mill near Gera town in the Jimma region, Western Ethiopia. (The area also has some of the finest honey available in Ethiopia). This is from a collection site 2km from the original Nano Challa station called \"Genji Challa\". Being so close, they extend their farmer reach some, but also buy from many of the same coop members (deliveries can be made to either). We put a bow on 2021 with some Philippine \"nano-lots\" that Ryan (Mostra Director of Coffee and Many Things) worked on with our friends at Kalsada in this vein, examples being the Sitio Belis Extended Anaerobic and Pigtauranan Anaerobic Natural.\u003c\/p\u003e\n\u003cp\u003eSumatran coffees have historically been divisive, and a major factor in that is the \"wet hulled\" processing method. Called \"Giling Basah\" in the native Bahasa language of Indonesia, the steps involved typically result in thick-bodied coffees with blunted acidity and some rustic notes that wouldn't be sought-after in any other origin but are expected and sometimes treasured in a Sumatra. The long and short (editor's note: roaster Nick can definitely go long on this...) is that in removing the coffee bean (seed) from the cherry, between the most common method (washed\/wet) and the \"ancient\" method (natural\/dry) there are innumerable variations. In most cases, once the mucilage (think \"meat\" of the cherry) is fully removed, the coffee is rested in it's parchment casing until it is in the lot-to-mid teens regarding moisture percentage.\u003c\/p\u003e\n\u003cp\u003eGiling Basah is resultant of how the marketplace culturally differs in Indonesia. Instead of farmers selling cherries to a co-op, for example, the coffee is milled down to parchment quickly by the farmer and sold after only a few hours of sun-drying, typically 50% moisture. The mills use specialized machines to remove the parchment from coffee when its 20-30% and then dried completely bare, accelerating the timeline. Why? Climate is your main reason, with mostly partial sunlight, super-high humidity, and the rainy season makes drying the coffee for export a huge pain.\u003c\/p\u003e\n\u003cp\u003eThe finished product using newer processing methods can still result in typical Sumatran notes (jungle floor, tobacco, mulchy, sweet basil, to name a few) but as with most other origins it is becoming increasingly common to find a coffee sharply straying from what once typified it's region. We continued to bid and drive the price up on all auction lots but eventually refocused our efforts on these 9 lots. Sumatran coffees have historically been divisive, and a major factor in that is the \"wet-hulled\" processing method. Called \"Giling Basah\" in the native Bahasa language of Indonesia, the steps involved typically result in thick-bodied coffees with blunted acidity and some rustic notes that wouldn't be sought-after in any other origin but are expected and sometimes treasured in a Sumatra.\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003eGiling Basah is resultant of how the marketplace culturally differs in Indonesia. Instead of farmers selling cherries to a co-op, for example, the coffee is milled down to parchment quickly by the farmer and sold after only a few hours of sun-drying, typically 50% moisture. The mills use specialized machines to remove the parchment from coffee when it's 20-30% and then dried completely bare, accelerating the timeline. Why? The climate is the main reason, with mostly partial sunlight, super-high humidity, and the rainy season makes drying the coffee for export a huge pain. The finished product using newer processing methods can still result in typical Sumatran notes (jungle floor, tobacco, mulchy, sweet basil, to name a few). Still, as with most other origins, it is becoming increasingly common to find a coffee sharply straying from what once typified its region.
